This tender and well-marbled steak is quickly gaining popularity, and for good reason! It is said to be the second-most tender cut, only to the tenderloin, and is often referred to as a 'petite tender' or 'shoulder steak'. If you've never tried one, order yours today!

Suggested Preparation:
The best way to prepare Teres Major steaks, and the way that we prefer to do it ourselves, is to utilize the reverse searing method.
- Turn your grill or smoker on to a low heat (275-300).
- Place the steak on the grill or smoker.
- While your steak is slowly cooking, heat a cast iron skillet and get it rippin' hot.
- Pull your steak once it hits the desired internal temp (we like to get ours to 120)
- Sear your steak in the cast iron with our house-made beef tallow for 1-2 minutes per side, basting it as it sears.
- Pull your steak and enjoy! (no need to allow for resting when reverse-searing)
- Be sure to cut across the grain on this steak, while serving, utilizing the 90 degree rule
