The crown and center-piece for your holiday meal. This roast is cut from the center of the premium prime rib section. It is a magnificent roast and our juiciest cut (also our favorite!). This cut boasts itself with being succulent, mouth-watering, and full of flavor.
Suggested Preparation:
The way we like to prepare our Prime Rib is to slow smoke to a desired internal temperature, and then finish at a higher heat. This can also be achieved using your oven. For an 8-10 lb roast:
- Turn your oven or smoker on to a low heat (250).
- Smoke or roast in your oven until the internal temp reaches 120 (approx. 4 hrs)
- Pull the roast off and allow it to rest for 20 minutes
- While the roast is resting, increase your oven/smoker temp to 450
- Put the roast back on until it reaches an internal of 130, medium rare (approx. 15 minutes)
- Remove from the oven/smoker and let it rest for 30 minutes, then slice and enjoy!
